Blueberry Walnut Pancakes

Here's a healthy alternative for pancakes. Wheat, nuts, and Blueberries!
If you can't find fresh Blueberries, buy them frozen. I've found that the frozen berries are half the price than the packaged dry berries.


In large bowl combine ingredients:
~
1 cup of flour
3/4 cup wheat flour
2 tbs granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
~
Add:
~
1 egg
1 1/2 cup milk
3 tbs cooking oil
1/2 cup Blueberries (crush some of them)
1/4 cup finely chopped Walnuts
~
Pour over hot greased skillet, turn when bubbly and golden brown.
Serve with real butter and your favorite syrup.

Yum!! I feed the boys blueberry waffles a lot and they love them. At first Matthew told me he didn't like blueberries until he tasted my waffles, now he loves them.

mmmmm....I had some ground hazelnut so we made hazelnut chocolate chip pancakes.Very good. I used dark chocolate, so it was a nice contrast with the maple syrup, and whipped cream on top.
