
I decided to pan fry fish using instant potato flakes.
Yum!

I used Whiting fillets.
The fish is great tasting and very economical.
Take each fillet and coat in white flour, then dip in a mixture of 2 eggs and 3/4 cup of milk & favorite seasonings. I used
Old Bay. Afterwards, coat fillets in potato flakes and fry in a greased skillet till brown and crispy.

For roasted potatoes -- cube potatoes, and mix in a large bowl with olive oil, garlic salt, and Cajun seasonings. Bake in oven till crisp.

Serve with buttered sweet peas. Entire meal cost less than $10 and serves 4.
