Today, I added some Asian stir fry to the mixed vegetables. This gave my soup a wide variety of vegetables -- potatoes, onions, chutes, greenbeans, carrots, red peppers, corn, broccoli, and peas. I seasoned with minced garlic, salt, and pepper.

Add drained ground beef and simmer until potatoes are tender. Serve with cornbread.
