I left it on...I made the bread and it is delicious. I left it on the counter for about 3 hours because I had to go to the Apple store for help with a computer issue. When I came home it was huge. I gathered it together and cut off one piece to bake. The rest is in the fridge. I couldn't wait to cut into it. I could have made a meal out of the whole loaf it was so good. Lashings of butter of course! Thank you, thank you for this recipe. I won't be going to get my bread at WHole Foods any more. By the way, I used one cup of bread flour.
